Menu Plan Monday: Cooking in the Heat

The heat is on, school has begun (we homeschool year round and just started fresh), and so I’ve been foisting much of the cooking onto my grill-master husband. As long as it means he gets a hunk of meat for dinner, he’s happy to grill.

The zucchini has started producing in earnest this week, too, and so it’s a good thing myself and half my children love grilled zucchini! Talk about easy! I get a serving of meat and an entire zucchini, grilled in thin planks and sprinkled with salt and garlic powder, and easily meet my weight-loss resolution of a no-starch dinner.


  • Breakfast: weekend leftovers (cinnamon rolls or frozen pancakes, toasted); I eat eggs.
  • Lunch: cheesy zucchini & tomatoes, using garden produce
  • Dinner: tuna+blt melts, cucumber sticks

prep for next day: make yogurt


  • Breakfast: Simple Granola with yogurt & berries; I eat eggs.
  • Lunch: pbj
  • Dinner: grilled balsamic chicken, grilled bread, grilled garden veggies


Welcome Home Wednesdays

  • Breakfast: toast with peanut butter and homemade jam; I eat eggs.
  • Lunch: picnic! flatbread, cheese cubes, blueberries [leftover chicken on salad for me]
  • Dinner: cobb salad


  • Breakfast: Simple Granola with yogurt & berries; I eat eggs.
  • Lunch: pbj [tuna salad for me]
  • Dinner: grilled pork, grilled potatoes, salad


  • Breakfast: Simple Granola with yogurt & berries; I eat eggs.
  • Lunch: chips & cheese
  • Dinner: homemade pizza


  • Breakfast: pancakes from scratch, made by Daddy, with homemade syrup; I eat eggs.
  • Lunch: bits and pieces (clean out the fridge)
  • Dinner: grilled hamburgers, salad


  • Breakfast: whole wheat cinnamon rolls with vanilla glaze
  • Lunch: pbj
  • Dinner: artisan bread & cheese & garden veggies

All meals only involve ingredients on my basic master pantry list.
