Menu Plan Monday: Summer Meals

simple easy homemade family menu plan

We will be having temperatures in the 90’s this week, and my garden might start yielding zucchini and tomatoes at last! So I need to start remembering how to do dinner in the heat. I always seem to lose dinner-making motivation in the summer.

Monday

  • Breakfast: weekend leftovers (frozen pancakes, toasted, with jam)
  • Lunch: pbj
  • Dinner: grilled chicken, salad, grilled flatbread (recipe coming this week!)

prep for next day: make yogurt

Tuesday

zucchini crust pizza

prep for next day: make hummus

Wednesday

Welcome Home Wednesdays

prep for next day:

Thursday

  • Breakfast: pancakes, because then Daddy will make breakfast (with homemade syrup)
  • Lunch: leftover hamburger patties (already cooked, from the freezer)
  • Dinner: Costco cold chicken, rolls, salad

prep for next day: pull muffins from the freezer,

Friday

  • Breakfast: whole wheat cherry muffins (made last week with last year’s dried cherries, from the freezer)
  • Lunch: rolls, cheese, veggies
  • Dinner: pulled pork, veggies

Saturday

  • Breakfast: pancakes from scratch, made by Daddy, with homemade syrup
  • Lunch: bits and pieces (clean out the fridge)
  • Dinner: grilled hamburgers, salad

Sunday

  • Breakfast: Simple Granola with milk and raisins
  • Lunch: pbj
  • Dinner: grilled sausages & veggies

All meals only involve ingredients on my basic master pantry list.

    I’m glad I am not the only one who loses motivation to cook in the summer. Here we have all of this fresh produce, and it is just too hot to get excited about it. Just bought the ebook, and I think I am going to love it!
