Yesterday, on Simplified Whole30: Catch-Up

Breakfast

Egg breakfast, plus a few veggies to choke down.

Lunch

Greens mix salad with toasted almonds and a homemade raspberry vinaigrette. I also had about a third of a pear while I was cutting pears for the kids.

Dinner

Balsamic Skillet Chicken, straight from Simplified Dinners, the only adjustment being not adding any thickening agent to the sauce. I just let it reduce extra, and it was delicious. I sautèd a handful of mushrooms as a consolation to my husband and me for not having the delicious crusty bread the children were served. I also had roasted frozen broccoli, because I really didn’t want to chop anything.

Skillet chicken is a great dinner, and the pan sauces are easy to adjust to be Whole30 compliant. This is one of my favorite quick dinner solutions in Simplified Dinners.

Halfway done. Yes, I’m definitely counting days.

I am over any sort of carb flu or carb emptiness feelings, but I do not feel any more amazing than I did before. I still have an afternoon energy slump, I still get inexplicable moderate headaches every few days, I still feel hungry between meals, and my skin has not cleared up. And, as I mentioned yesterday, I’m not any lighter either. So, so far I feel like all this effort has given me very little benefit, except perhaps strengthening my ability to deny myself.
